Spring- at least according to the calendar- is finally here! The spring peepers were heard here last night for the first time, in warm spots crocuses are in bloom, and the sap is rising in the trees.
Around here, this means that it is time to tap the sugar maples for their sweet sap and boil it down to make maple syrup. Don’t feel up to doing this at home? Don’t know a maple from a magnolia? There are many sugar houses in Massachusetts that are happy to give you a tour.
The Massachusetts Maple Producers Association site lists Sugar Houses and Sugar House restaurants that you can go to for pancakes and fresh maple syrup. They also describe in detail how to make your own maple syrup. Call before setting out to confirm hours.
